Artichoke and Spinach Quesadillas
There is nothing better in life then sitting down to eat a quesadilla. I have been in love with these things for as long as I can remember. I just love the cheesiness of them and the warming feeling that I get knowing that heaven is closer than we think. I am all about QUESADILLAS.
We have to realize that just because we are living healthy lifestyles we don’t have to give up the things that bring us joy when they come in the form of food. We just have to do a little tweaking. There is always a healthy option to any meal. It may take a while but it is surely out there. Quesadillas on there own are truly a good food to eat even after making the transition into healthy living. But that doesn’t mean we cant kick it up several notches.
By adding a couple of more veggies and changing out or tortillas, we have made this a definite go to snack on the weekends. Well enough talking, lets get to cooking!!
What You’ll Need:
¼ tbs olive oil
8 oz artichoke hearts – drained and chopped
6 oz spinach leaves
4oz cream cheese
1 c shredded mozzarella cheese
¼ shredded parmesan cheese
8 tortillas (I like the spinach and tomato flavors)
Salt and pepper to taste
What You’ll Do:
In a large pan warm up the tortillas about 1 minute on each side.
Using a large pot over medium-high heat up the oil and cook the artichoke hearts
Reduce the heat to medium and add in the spinach, cooking until they wilt. Mix in the cream cheese, mozzarella cheese and Parmesan cheese until everything is melted. Season with salt and pepper to taste. Remove from heat.
Now it’s time to make the quesadilla: spread about ¼ c of the mixture on four of the tortillas just a little from the edges. Place the remaining four tortillas on top of them.
Heat the large pan back up over medium-high heat and cook the quesadilla for about 1-2 minutes on each side, until they are nice and brown (make sure not to burn them, unless that’s your thing)
Remove from the pan, let it cool a little, cut into quarters and ENJOY!!!
