Artichoke and Spinach Pesto Pizza
There is nothing better than having pizza on the weekend. Well the only thing better is having it in the middle of the week. And even better than that is having more than one slice with out the feeling of guilt. I am a huge fan of pizza and would eat it every night if I could.
Granted I know that just isnt possible, but when I do, I love to really indulge and enjoy myself. So I was able to find a pizza recipe that gave me everything I wanted and still kept it on the healthy side. By adding some veggies to my pizza and using pesto as opposed to a red sauce, I am able to keep it delicious and still keep in line with my goals.
Lets Make Some PIZZA!!
What You’ll Need:
1-16 oz home made or store brought pizza dough
½ c spinach basil pesto (or regular pesto)
1 c spinach – chopped
1 c artichoke hearts – chopped
1 c shredded mozzarella cheese
½ c shredded parmesan cheese
What You’ll Do:
Preheat your oven to 450 degrees
Place the dough on a lightly floured surface and use a rolling pin to roll the dough into a circle.
Spread the pesto sauce evenly over the dough. Top with the spinach artichoke, mozzarella cheese and parmesan cheese.
Place the pizza in the oven to bake for about 18-20 minutes depending on your oven or until the crust is nice and golden brown and the cheese is perfect and melted.
Remove the pizza from the oven and let it cool for a couple of minutes.
Cut into slices and serve.
