Cauliflower Grilled Cheese
I am def all about comfort foods. Things have been super crazy for me and all I want to do is eat. Some days I feel like nothing can go right other than me standing in the kitchen eating something that I’m not supposed to. But as we know, that isn’t what I should be doing, nor will it keep me on track .
Now, there isn’t much that I can do about those crazy days because some things are out of our control. But I can take charge of what I cook and what I put on my plate. There are some great alternatives to our comforts that still keep them in the comfort category and bring so much joy and comfort in our lives. That would be Cauliflower Grilled Cheese!!!
What You’ll Need:
1/2 head of cauliflower
4 slices of bread
Favorite cheese (shredded or sliced)
What You’ll Do:
Slice the cauliflower to make flat layers that would look similar to slices of cheese. Heat up a medium sized pan. Put a little butter in the pan to toast one slice of bread until it becomes golden brown. Take out and add another slice of bread to the pan (add a little more butter if needed). While the second slice of bread is toasting, add about 2 slices of cheese and 2-3 slices of cauliflower. Then top with another two slices of cheese and the first slice of toasted bread. Once you have assembled everything, its time to FLIP. Take your time with the flip because its the tricky part. Now that your have your flip done, give it a little minute to let the cheese and get into the cauliflower and make its magic.
All the cheese is nicely melted and the magic is happening. Take the grilled cheese out of the pan and ENJOY !!!
