Tortilla Soup

It is getting really cold out and there is nothing better than have a nice warm bowl of soup. But that can get boring. So every now and then we need to kick it up several notches. Every time hear the weather on the news or read something online, they seem to always be talking about a new cold front or polar vortex. Like enough already. I’m ready for some SUN. And when they aren’t talking about cold fronts they are talking about rain. I’m ready for some SUN!!!

No matter how cold it is outside. I can always count on the comforts of home and my lil kitchen to keep me warm. So even though I don’t have the sun shining on my face, I can still feel more than warm on the inside. And to do just that I turn to a great bowl of soup.

Now I know what you’re thinking, “I want more than just plain chicken soup”. Trust me I understand. Now don’t get me wrong, there are some times when chicken soup is all that you need. Its a great hearty soup packed will all things the body needs. Yet there are time when you want, need and crave more. When you want variation. I need variation. I crave variation. So variation I created.

How about a nice bowl of Tortilla Soup !!!

What You’ll Need:

2 teaspoons olive oil

1 onion, roughly chopped

3-4 cloves garlic, roughly chopped

1 jalapeño pepper, stem and seeds removed and roughly chopped

Salt and pepper to taste

¼ teaspoon dried oregano

¼ teaspoon cumin

½ teaspoon ground chipotle pepper

1 14-ounce can fire roasted tomatoes and green chilies

3 cups chicken stock

15 ounces black beans, drained

1 cup frozen corn

2 cups Shredded Turkey (a 1 rotisserie chicken, shredded)

What You’ll Do:

Heat up a large pan over medium-high heat. Add in the onion, garlic and jalapeno. Saute until the onions are clean and the jalapenos are soft. Season with salt, pepper, oregano, cumin, and chipotle pepper. Stir everything up and cook for about 2 minutes.

Add the fire roasted tomatoes and the chicken stock and bring to a boil.

Reduce to a simmer and let simmer for 30 minutes.

Using a blender, blend the ingredients until smooth. Taste and make any necessary adjustments to taste. Add in the black beans, corn and shredded turkey (or chicken) and let it all marinate before serving.

Serve in a bowl with some of the suggested toppings below. ENJOY!!
