InstaPot = InstaGenius - Enchilada and Quinoa Casserole

Getting back into the swing of things is seeming to be a little harder than expected. And not to mention we have all of these GOALS that we set out to accomplish. So adding progress on top of our already hectic lives has us feeling like we just may need to skip a couple of steps every now and then. Or, here is a good one, lets combine some things together. Meaning, lets do a quick workout when where are sitting at our desk or going for a quick run during our lunch break. Now that’s what I call killing two birds with one stone LOL.

Having a meal on the go is nothing new to us, but skipping a meal is something that we need to leave in 2018. I know that some days are way busier than others and meal prep doesn’t always happen like we planned. Trust me I know. My regular meal prep day is Saturday but this week meal prep didn’t happen until Wednesday. So I am there with you on days not going as expected.

Now, even though we don’t get to put a check mark on everything on our list, it doesn’t mean that we have to eat crappy food. I introduce to you the INSTAPOT. The instapot comes in handy when you realized that you don’t have a enough time to stand at the stove and cook a meal but you still want to make sure that you are reaching your goals and eating healthy !! Just think, you have everything ready in the fridge to go and make this amazing meal but you realize that you have like thirty minutes before the HANGRY monster rears its evil head. I bring you the Instapot. Your healthy meal will be ready in no time and you wont have to give any evil looks in the process!! So lets get down to business. We are Making Enchilada and Quinoa Casserole

What You’ll Need:

1 c enchilada sauce

1/2 red onion - diced

1 can green chilies

1 can corn - drained

1 can black beans - drained

1 c chopped tomatoes

1 tea chili powder

1/2 ground cumin

1/4 tea salt

1 c uncooked quinoa

1 1/2 c water

What You’ll Do:

Place all the ingredients in a 6 qt InstaPot. Set it to cook on manual high pressure for 1 minute. Release the pressure naturally for about 15 - 20 minutes. Release any remaining pressure and stir mixture. You can add in some cheese if you would like. And just that easy its time to Eat and ENJOY.

You can serve with fresh avocado and cilantro to garnish or a dollop of sour cream.
