Pasta for Dinner

One of the first things that people tell you to cut when they hear that you are eating healthy is CARBS. This is WRONG, FALSE, a LIE. Every single thing that you eat has carbs. EVERYTHING. So cutting them out is IMPOSSIBLE. What you should really be trying to cut down on are the STARCHES, particularity WHITE STARCHES.

The white starches are the the white bread, white rice and pasta. It was the hardest thing for me to cut out the PASTA. I freaking LOVE pasta. I have always felt like deep down inside I had to be part Italian because I love pasta so much LOL. Sadly I am not. But I still LOVE pasta.

So I had to figure out how to still be able to have pasta every now and then. Once I got serious about my journey, I went from have pasta every two weeks to maybe once a month. And when I did have it, I made sure that it was a from of HEALTHY PASTA.

Besides pasta coming in all shapes and sizes, it also comes in various “flavors”. The most popular being wheat pasta. Here it is 2018 and you can get brown rice pasta, black bean pasta, quinoa pasta, the list goes on and on. Promise.

So that means that pasta is one thing that you dont have to give up. Just change it a little.

Lets get to cooking some Brown Butter Butternut Squash Fettuccine Alfredo

What You’ll Need:

16 oz of whole wheat pasta (I prefer fettuccine)

4 tbs of butter

1 small onion, diced

1 tbs of rosemary, finely chopped

1 c vegetable stock

3 c diced butternut squash (cooked)

1 c milk

Salt and Pepper to taste

What You’ll Do:

Cook pasta according to the directions or until al dente.

While the pasta is cooking, melt the butter in a large skillet over medium heat. Add the onions and rosemary and saute until softened. Up the heat to high so that the butter starts to brown (about 2 minutes). When the butter is brown, add in the vegetable stock and the butternut squash. Cover and put the heat to med - high. and cook until the squash is tender (about 10 minutes)

Don’t forget to keep an eye on the pasta cooking !!!

Use a potato masher to mash the squash in the pan. Add in the milk and mix it all up. If you have a hand blender, blend until smooth. If you have a stand blender pour everything in and blend until smooth. Add salt and pepper to taste. Mix with the cooked pasta and serve.
