Salmon in a Pouch

The last thing that I want to do in the summer is be in the kitchen, but not eating and eating out are not an option. So the best thing to do is find something quick and easy that taste great. So I bring you Salmon in a Pouch. 

The amazing part about this is that is super no fuss, taste great, and no clean up in the end. All you need is some salmon, veggies, and parchment paper (wax paper). I 100% love cooking food in pouches. Its an easy meal that doesn't take forever and I can get other things done while my dinner or lunch cooks. 

What is even better about cooking in pouches, is that you can cook for the whole week in one shot, Put your pouches on a baking sheet and slide them right in the oven. Talk about EASY. Let get started!!!

What You'll Need:

1 c Veggies that you love (carrots, zucchini, leeks, asparagus, tomatoes, kale) *the more the better*

6 oz salmon fillet

Fresh herbs (rosemary, dill, tarragon, parsley, oregano)

zest and lemon juice

Olive Oil 

salt and pepper to taste

Parchment Paper (Wax paper)

What You'll Do:

Preheat oven to 400. 

Get your parchment pouch ready: arrange the veggies on the bottom of the parchment. On the top add your salmon, sprinkle with the herbs, lemon zest and juice, as well as salt and pepper. Drizzle with olive oil. Fold the edges of the parchment over on the top and sides to lock in the flavor and make sure that the juices don't get out. Crimp and seal. Place the bag on a baking sheet and cook in the oven for about 20 minutes. 

Remove from the oven and let cool for about 5 minutes. Open the bags and serve !!!
