Farro with Asparagus and Kale

Another day - Another Dinner. The hardest part is what the heck are we going to make eat. I promise you I have the toughest time figuring this out. So to help me out, I spend a lot to time online going through emails and various websites trying to figure it out. And then I stumbled upon this little gem. Farro with Asparagus and Kale

What You'll Need 

1 tea olive oil 

2 c kale - stemmed and sliced 

10 asparagus - cut into pieces 

1 oz soft goat cheese 

1/2 c low sodium chicken/vegetable stock

1 oz Parmesan cheese 

3/4 c cooked farro

What You'll Do

In a large skillet over high heat, heat up the olive oil. Add in the kale and asparagus and cook until the asparagus is slightly crunchy and the kale is soft. Reduce the heat to medium and add the stock, goat cheese, parmesan cheese. Stir to melt the cheese. Add in the farro and continue to stir until everything is thick and heated all the way through 

Serve and ENJOY!!!
