Mexican Stuffed Sweet Potatoes

I have found a wonderful dish that will make you look like a true top chef and make you want to start a cooking show. There is nothing better than a simple meal that looks like the best thing ever and doesn't take much time to make. The summer is upon us and if you are anything like me, you love to eat but don't want to be in the kitchen cooking all day ... Lets Go !!!!!

What You'll Need:

For the Sweet Potatoes:

4 medium sweet potatoes

Extra virgin olive oil

Salt and pepper to taste

1/4 cup of cilantro (additional for garnish)

4 eggs 

1/2 teaspoon Taco Seasoning 

For the Sauce :

1 medium avocado 

1 tablespoon lime juice 

salt and pepper 

2 teaspoons of lime water

1 teaspoon lime zest

What You'll Do:

Preheat oven to 400 and line a baking sheet with foil and put the potatoes on it. Cook until the potatoes are soft then place to the side and let them cool. Make sure to reduce the oven heat to 375. Slice the potatoes down the middle and scoop out some of the flesh of the potato adding it to a bowl, allowing it to keep its shape. 

Mash up the potato flesh and remove half of it from the bowl (you wont be using what you removes so you can put it away to use for another day). With what is in the bowl add taco seasoning, cilantro and salt and pepper to taste and mix well. 

Once everything is nicely mixed back together add them back to the potatoes dividing between the four potatoes. Make sure to leave a large hole in the middle of each potato. (you can use the back of the spoon to make sure that the hole does not go too far down. 

Place the sweet potatoes back on to the baking sheet and crack the egg into each hole. Sprinkle with salt and pepper. Place back in the oven and bake until the egg is cooked to your likeness.

While the sweet potato cooks, place the avocado, lime zest, and lime juice into a food processor and blend until smooth. While the blender is running, pour in the water and combine. Add salt and pepper to taste. Once the potatoes are done drizzle the avocado sauce on top. 

Garnish and ENJOY!!!
