Cashew Chicken with Snow Peas
One of the easiest things to make is chicken. Not only is it inexpensive but you can make just about anything with it. Its always available and its super quick to cook. So you can have a meal in no time.
The only problem is, is that sometimes it seems like all we eat is chicken. There are times when I truly feel like I have had enough chicken. Chicken is every where. And when we go out to eat at a new place we tend to have the chicken dish as the safe bet.
But I want something different. No more chicken breast and sides as a quick easy dish that turns out to be boring. Time to really Chef it Up ... Cashew Chicken with Snow Peas is on the Menu
What You Will Need:
- 2 to 3 cups fresh snow peas
- 1½ pounds boneless, skinless chicken breast, cut into bite-size pieces
- 4 garlic cloves, minced
- Olive Oil
- 2 tablespoons rice vinegar
- 1 tablespoon reduced-sodium soy sauce
- 1 teaspoon sesame oil
- 4 to 5 chopped scallions
- ¾ cup roasted cashews (unsalted or salted)
- salt and pepper to taste
What You Will Do:
Place snow peas in a microwave-safe bowl with a splash of water and microwave for 3 minutes. Drain and set aside.
Warm a large pan over medium-high heat and add olive oil. Add chicken and cook for 5 minutes, flipping halfway through, until slightly browned on each side (chicken does not have to be cooked through).
Add garlic to skillet with chicken and sauté for about 30 seconds.
Add rice vinegar, soy sauce and sauté for another 1 to 2 minutes, until thick and brown. Add snow peas and sesame oil and sauté another minute.
Mix in scallions and cashews. Season with salt and pepper to taste. ENJOY!!
