Bacon and Kale Frittata
When I actually do get a minute to sit down and have breakfast, I like to make it special. I love to really put my all into it and enjoy it. Something that makes me feel like I'm on a cooking show and I teaching the world. But I snap back to reality and realize that yes I can have a real breakfast but I also have other things to do with my day.
So for everyone that like me, that loves to enjoy a real breakfast as opposed to always eating something on the go, Bacon and Kale Frittata is there it is at. To be honest, the best part about a frittata is that you can make it the night before and then grab and go the next morning. Believe you me it taste just as good the second time around.
Lets Get Started
What You need:
2 Slices of Bacon
1 Small Onions
6 c of Kale
1/4 c feta cheese (or any cheese that you like)
Salt and pepper
What to Do:
In a large pan, heat the olive oil over medium heat and cook the bacon. About 5 - 7 minutes turning over to reach desired texture. Set on paper towel to drain excess oil. Reduce the heat just a bit and add the onions. Cook for about 2 - 3 minutes until soft. Add some of the kale and toss to cook, adding little by little until all is cooked and tender, about 5 minutes.
In a bowl, whisk the eggs, cooked bacon, cheese, and salt and pepper to taste. Then pout over the kale and onion mixture. Make sure to evenly distribute the eggs and veggies. Cook undisturbed until the eggs set, about 5 minutes.
You can either put the pan in the oven to cook or place a lid on the pan and bring down the heat to cook all the way through (something like steaming). If cooking in the oven, cook until the top is browned, about 30 seconds to 1 minute
Once you have mastered the basic frittata, feel free to add other veggies and goodies to add your own flavor to the mix
