Asparagus and Mozzarella

When cooking healthy it seems like we focus so much of our efforts on the protein. But we need to eat more than chicken and fish. I want some side dishes. And I'm talking about more than steamed veggies. I like to eat.

Granted I know that when I eat to make sure I am eating proper portions, but I need to be able to fill the portions with foods that I actually want to eat. And what I want to eat is ASPARAGUS. Don't forget that I have a love for cheese. So when the idea to add the two together. It was like something crazy went off inside me and I couldn't wait to get to the kitchen.

Let's Get Started

What You Will Need

1 lb of asparagus (ends cut off)

3 tbs of olive oil

4 clove of minced garlic

Salt and pepper to taste

1 1/4 c of mozzarella cheese

What To Do

In a large bowl mix together the asparagus, olive oil, garlic, salt and pepper. Preheat the oven to 425 degrees. Lightly grease a baking sheet with cooking oil (spray would be easier or you can line the baking sheet with parchment paper). Place the asparagus on the baking sheet evenly in one layer as much as possible. Bake for about 10 - 15 minutes until the asparagus is tender. Remove from the oven and sprinkle with the mozzarella cheese. Place back in the oven and broil until the cheese is melted.
