Cauliflower Mash

There are things in this life that take better in another version, Cauliflower Mash is one of them. I am a big fan of mashed potatoes and just couldn't imagine giving them up. So I had to figure out an alternative and I had to do it fast. Enter Cauliflower Mash. 

Cauliflower is just a versatile vegetable to use. It has more going on for itself than just being steamed or sauteed. I have made pizza and grilled cheese with cauliflower and it taste amazing. So when I heard about using it as a substitute for mashed potatoes I was game. 

Lets Get Started 

1 head of cauliflower 

Salt and pepper to taste

Almond Milk 

3 tbs of butter 

Here is what to do

Cut put the cauliflower head into small pieces. The smaller the faster it will cook. In a pan melt the butter and cauliflower pieces and saute, stir occasionally. About 3 - 5 minutes. In a pot, add water to boil and add the cooked cauliflower until tender. This should take about 10 mins. Stain out the cauliflower from the water and add to blender or bowl to mash by hand. If you are using a blender pulse until it is the desired textured add Almond milk as needed. If you are mashing by hand, mash until it is the desired texture adding almond milk as needed. In either instance, salt and pepper to taste. 

Add it with you favorite main dish or even with some roasted sides.
