If you are anything like me, you LOVE pasta and pasta dishes. There is something about slurping up pasta and pasta sauce that really warms my heart. But Im sure that you have heard it plenty of times that you cant eat pasta when your tying to be healthy because of carbs and what not.
This just isn't true anymore. I you LOVE pasta have you some pasta. But remember all things in moderation. But just in case you forget that part, there are some healthier versions of pasta that allow you to have a bigger portion.
Pasta has come a long way from the days of spaghetti. Not only do they come is different shapes and sizes but they also come in different flavors. If you go to an "high end" store you can find fresh pasta made in tomato basil and even spinach. If you can't make it to a fancy store, there are also come dry pasta options that are healthy and packed with flavor.
Healthy Pasta Options
No matter the pasta that you choose, we will have to make something with it. So lets have some SHRIMP SCAMPI !!!
Here's what you need:
6 oz of Pasta
1/4 c chopped parsley
1 1/1 tbs lemon zest
1 tbs olive oil
1 garlic clove
1/4 tea crushed red pepper
3/4 lb large shrimp (shelled and deveined)
Salt and pepper to taste
1/4 c low sodium vegetable broth
1 tbs lemon juice
Lets Get Started
Cook the pasta and set to the side as you normally would
Combine the 1/2 teaspoon of parsley and 1 tablespoon of lemon zest and set to the side.
In a large pan, heat up the olive oil . Add the garlic, shallots, and red pepper. Cook until shallot are soft. Add in the shrimps and salt and pepper and cook until the shrimp are opaque (about a min or two). Stir in the broth and lemon juice. Bring it to a boil and reduce the heat to medium.
Stir in the pasta, the remaining parsley and the remaining lemon zest. Toss to make sure everything is coated and remove from the heat.
Add to a serving bowl and top with the parsley and lemon zest mixture made in the beginning (makes it look pretty)
