Thai Chicken Salad

There is nothing that has gotten such a bad wrap than a SALAD. When people think about eating healthy they automatically think of a boring plain salad. Salads have such a hard life. Those are the days of the past. With all the things that you can add to a salad to jazz it up and still be healthy the possibilities are endless. For starters, here is a wonderful Thai Chicken Salad. 

 

Lets Do This 

1/2 c sliced scallion

1 tbs minced garlic 

1 jalapeno

3 tbs lime juice 

1 tbs low sodium soy sauce 

2 tbs honey 

1 tbs peanut oil 

1 tbs rice wine vinegar (or distilled white vinegar)

7 c chopped romaine lettuce 

1 c shredded red cabbage 

1 c grated carrots 

1 c bell peppers 

1 c chopped cucumber 

1 c snow peas 

2 c cooked and diced chicken breast 

4 tsp chopped unsalted peanuts 

Lets Go 

In a large bowl, whisk together scallions, garlic, jalapeno, lime juice, soy sauce, honey, peanut oil, vinegar, and 2 tbs of water. Set aside and let it become magic. 

Once the magic has happened, while whisking, add lettuce, cabbage, carrots, bell peppers, cucumbers, and snow peas. Toss to make sure everything is coated. 

The salad is READY to serve ... divide between all the guest, sprinkle on the chopped peanuts and ENJOY.
