This is what Tuesdays were made for ... TACOS. Just because you are eating healthy doesn't mean you have to miss out on the fun. You can have Tacos just like everyone else. You can even HOST a Taco Tuesday Party. And to help you out a little, I have the perfect recipe.
Lets Get Started
1 c cooked shredded turkey breast
2 tbs jalapeno
1 sliced avocado
4 fat free flour tortillas
1 c shredded lettuce
1 c cherry tomatoes
1/2 c shredded reduced fat cheese (cheddar. mozzarella, etc)
Lets Do this
Lets do all the prep work first: chop up the cilantro (about 2 tbs worth), slice up the avocado as thin as possible, zest and juice the lime, and chop up the tomatoes (halves or quarters)
In a medium bowl, combine the turkey, jalapeno, cilantro, lime zest, and lime juice.
Warm up the tortillas in a large pan over a medium heat. You want to brown them a little and not cook them. About one minute each side once the pan is nice an hot.
Top each warmed/cooked tortilla with 1/4 cup of the turkey mix, add some lettuce, add tomatoes, add avocados and shredded cheese.
