Portobello Mushroom Sandwich
If you are anything like me, and I know you are, there are times in your life when you just want to eat a burger. And fast food joints just don't do it. You want a nice meaty juicy burger. Then you remember that you are eating healthy. You have made the transition into healthy living and you dont want anything to mess up the progress that you have made. But you want a BURGER
Enter the Portobello Mushroom. This will be your new best friend I promise, It is big enough to fill up the burger bun and meaty enough to make you actully think that you are eating meat. I know it sounds crazy but just give it a try. Its super easy to cook. You can make a simple cheese "burger" or you can really kick it up a notch.
Let's Get Started
1/2 c lime juice
2 tbs olive oil
1/2 tea red wine vinegar
1 tbs minced garlic
2 tea chopped cilantro
1/2 tea salt
1/4 tea pepper
4 large portobello mushrooms caps
8 tbs guacamole
4 rolls, buns, whatever bread using
1/2 c baby spinach
1/2 c sliced roasted red bell peppers
1/2 cu sliced cucumbers
4 slices of tomatoes
4 slices of cheese (your choice)
In a bowl mix together, 1/2 cup water, lime juice, olive oil, red wine vinegar, garlic, cilantro, pinch of sugar, salt, pepper. In a resealable bag place in the mushroom cap and pour the mixture over them. Seal the bag and let sit for about an hour.
Preheat the oven to 400 degrees
On a baking sheet, place the mushroom caps, stem side up and and place in oven for about 15 minutes or until the mushrooms are brown and tender.
On the bread, rolls or buns, spread the guacamole on each half. Add spinach, roasted bell peppers, and cucumbers to one half. Top with tomatoes and mushroom caps, and cheese.
All that is left is to enjoy.
