Avocado Chicken Pita

Figuring out what to make to eat on a daily basis hasn't been as easy as in the past. With everything that is going on, eating breakfast is a true challenge. It may sound crazy but its true. I pack up a nice breakfast every single day. But by the time I get to work and get caught up in emails and never ending questions, next thing I know, my stomach is screaming and its 11:30a. So once again I have missed breakfast. 

I am indeed learning to fix that little problem. Solution, set an alarm. As crazy as it sounds, yes i have to set an alarm to remind myself to eat breakfast. Most days I think that if others around me didn't actually get up from their desk or talk about what they were planning to eat that I would miss out on lunch as well. This is very bad I know. 

As difficult as it has been to actually eat a meal, its been more difficult to figure out what to eat. So I have made an effort to actually take time and make some meals that get me excited to eat again. When you eat plain things that you don't care about, its easy to forget that you have it packed. But when you try a new recipe or add some new flavors to an old classic, it makes you excited to eat the meal. You brag about it to your friends and co-workers. Here is one of those dishes

Lets Get Started 

1 cooked chicken breast cut up 

1/4 cup reduced fat shredded cheese 

3/4 c diced avocado

1/2 c chopped bell pepper (any colors)

1/2 c chopped celery

1/2 c chopped cucumber 

1/4 c chopped red onions 

6 tbs balsamic dressing 

4 pitas cut in half 

Lets Do This 

In a large bowl, toss the chicken, cheese, and all the vegetable along with the dressing. Make sure that everything is nicely coated. Open up your pita half and fill it with the avocado chicken mixture. Then EAT !!! Yes its just that simple.
