Scramble Up Some ToFu
Everyone has their go-to breakfast meal. Some people like nuts and grain cereals, some people like eggs and toast, and there are others, like myself, who would live a WONDERFUL breakfast spread. Whatever your fancy is for breakfast, its always nice to do something different every now and then.
Besides the variation of a Saturday breakfast meal and a Tuesday breakfast, weekend breakfasts are always better, every now and then we really need to stop outside of the box and try something new. I mean really new. I’m not talking about having turkey bacon as opposed to regular bacon. I mean really stepping it up and being creative. Trying something that you never thought you would and liking it. See liking it is the crazy part. For me, that would be TOFU.
I have always wanted to try a tofu dish but never had the courage. Then I came across a wonderful breakfast recipe and couldn't pass up the chance. As we know breakfast is my favorite meal of the day and when trying something new, its best to stick with something you know. So lets make some Scrambled Tofu !!!
What You’ll Need:
1 tsp olive oil
4 oz of soft tofu, crumbled
1/2 large red bell pepper, chopped
2/3 c Portobello mushrooms, chopped
1 c spinach, chopped
1 whole wheat bread
1 oz mozzarella, part-skim
1/2 tsp oregano
What You’ll Do:
In a medium pan heat up the olive oil. Once hot add in the tofu and vegetables. Cook for about 5 to 7 minutes, stirring occasionally. Once cooked, add to the toast and top with shredded cheese and oregano. ENJOY !!!
