Breakfast Eggsadilla

Keeping on the course of the amazing meal that is breakfast, we need some options. See breakfast is amazing because of its diversity. It can have just about everything, just about any food can be come a breakfast food if you treat it right. Breakfast is what makes the world go round and puts a smile on most people’s faces.

Everyone loves to be able to wake up on the morning cook up a nice breakfast and sit down and eat while reading or watching a favorite show. But in reality we have a couple of minutes to grab something while we rush out the door. So to help I have come up with Breakfast Eggsadilla. It has everything that you could want in a sit down meal, yet the luxury of being able to grab it and eat it on the go. Oh yes, BREAKFAST EGGSADILLA!!

What You’ll Need:

2 large eggs

2 tbs green peppers, chopped

2 tbs red onions, chopped

1 wheat tortilla

1 oz shredded cheese, your choice

2 tbs chunky salsa

What You’ll Do:

Heat a medium pan and once hot add some coconut oil. Cook the scrambled eggs with the onions and peppers. Once cooked, layer half of the tortilla with shredded cheese, then the scramble egg mixture, then chunky salsa, and finally then a little more shredded cheese. Fold over the tortilla and slice in triangles. If you want to get really fancy, add a lil dallop of salsa on top of your finished EGGSADILLA !!!
