Oven Baked Eggs with Spinach and Bacon
I LOVE LOVE LOVE breakfast. Not only is it the most important meal of the day cause of all that great stuff, but I feel like it has the best meal options. You can be as creative or as plain as you want with breakfast and it always taste amazing.
There is nothing better than a fancy breakfast buffet with everything that makes your heart skip a beat, where you can indulge in all of your favorites. And there is nothing better and a nice simple breakfast of eggs and toast. Either option and you are just as happy as every.
Please understand that breakfast is so amazing that they created BRUNCH so that you can eat it longer during the day. That’s how you know that breakfast is just that amazing. And to get the day started, we are making Oven Baked Eggs with Spinach and BACON.
What You’ll Need:
1 teaspoon olive oil
4 slice of Canadian bacon - chopped
1 shallot - mince
1 medium tomato - chopped
4 cups of baby spinach
2 large eggs
Salt and Pepper to taste
What You’ll Do:
Preheat oven to 350°F. Lightly spray 2 (8-ounce) ramekins with cooking spray.
Heat oil in a nonstick pan over medium heat. Add Canadian bacon, shallot and tomato. Cook, stirring frequently, for about 2 minutes. Add in spinach. Cook 1 minute, tossing occasionally, until wilted.
Place mixture into prepared ramekins. Break 1 egg into each ramekin, keeping the yolk intact. Sprinkle evenly with salt and pepper.
Place ramekins on a baking sheet. Bake for 15 to 20 minutes or until egg whites are opaque and yolks are cooked as desired. Serve immediately.
