Prosciutto Spinach Frittatas

I am huge fan of breakfast. It is my favorite meal of the day and to be honest I can eat breakfast food any time of day. Breakfast food taste AMAZING and the possibilities are endless. This is why I love breakfast so much.

When it comes to breakfast you can be super fancy with different ingredients. Or you can be super laid back and just have a bowl of cereal. Like how awesome is that. You can just about take any breakfast recipe and jazz it up and make it your own.

Think about it you can have simple bacon and eggs one morning. The next morning you can take those two basic ingredients and add pepper, onions, and tomatoes and now you have an omelet. AWESOME, to say the least.

Breakfast is everything that is right with the world. People love breakfast so much that they created BRUNCH because they wanted breakfast to last a little longer and didn’t want lunch to get jealous. Breakfast is where it is at and everyone knows it.

To prove even further that breakfast is totally awesome here is an amazing no fuss recipe yet still super fancy. I believe anytime that prosciutto in involved it automatically kicks the dish up a notch. Let’s just get to it:

So Let’s Get Started:

6 large eggs

½ c milk

¾ c goat cheese

5 oz baby spinach, cooked

½ c roasted red peppers, diced

2 oz prosciutto, sliced

12 cup muffin pan

Salt and pepper

Here’s what to Do:

Preheat oven to 350 degrees. Spray the muffin with cooking spray. In a large bowl mix the eggs, milk, salt and pepper, cheese, spinach, and the roasted peppers. Pour the mixture into the muffin tins about a ¼ of the way in each. Put the prosciutto on the top of each muffin cup. Cook for about 20 to 25 minutes depending on the oven. The center of the cups should be set. Once they are done, cool on a rack for about 5 minutes. Then remove them from the cups. Its best to serve them warm.

They can be put in the fridge and reheated any day that you want. Just heat up in the microwave.
