Summer Treat – Peach, Toasted Almonds with Greek Yogurt

As we all know the summer is 100% here. It is hot as ever outside and eating hot food just really isn’t in the cards some days. I love to eat just as much as the next person but I really don’t care to be eating hot food on a hot day. It’s just too much. So, we have to get a little creative and come up with some treats to eat that allow us to not only stay cool, taste good and still be a great healthy option. Cause most days the kid in me just wants to sit outside and eat popsicles all day. Am I the only one????

Then the grown-up in me takes over and I have to have some real food and actual meals. So why not have a wonderful summer treat. The Greek yogurt bowl is kind of like a grown-up popsicle. You are able to have this wonderful treat that cools you off and also get some fruits and healthy fats in. Is this not the perfect treat? The PREFECT TREAT.

So Let’s Get Started:

2 tbsp. sliced almonds

1 peached sliced

6 oz. plain Greek yogurt

1 tbsp. brown sugar

1 tbsp. honey

Here’s what to do:

In a pan lightly toast the almond slices. This should take just over a minute then place to the side. In a small bowl, mix the sliced peaches with the brown sugar until all peaches are coated lightly. In another small bowl, add the Greek yogurt. Add the brown sugar peaches on top. Sprinkle on the toasted almonds. Drizzle with honey to add some eye appeal. ENJOY!!!!
