Let’s Make Granola
So one thing that I am totally in LOVE with is GRANOLA. It may seem like a crazy love affair but it’s so freaking tasty. And when I found out that I was so easy to make, my obsession with GRANOLA grew a million times that day. To be fully honest granola and I did have a on again off again relationships. But we are back on. When I started my journey and made all the changes to my eating habits, there are of course some things have to go, and granola was one of them. I was heartbroken about it but I parted ways.
The amazing thing is when you know better, you do better. And I was on a mission to get my love granola back. That started with research. Most of the time granola is classified like trail mix (yes trail mix gets a bad rap as well). Most times they are classified as a “bad” healthy food because of all the things mixed into them. So its not just the basic oats and couple of dried fruits and nuts. They have become packed with so many sweets to appeal to the general masses. This is what makes them so unhealthy.
With KNOWLEDGE comes POWER. I became armed and equipped with a way to get granola back in my life. I found that I can simply make my own GRANOLA. It was such a simple solution, I felt crazy for not thinking of it before. I CAN MAKE MY OWN GRANOLA. Our beautiful bond was restored and everything was right with the world.
So let’s get started:
3 C rolled oats (not that instant stuff)
3 tbs of brown sugar
1/2 tea ground cinnamon
1/4 tea kosher salt
1/3 c honey
1/4 vegetable oil
1 tea vanilla extract
1/2 c dried fruit
1/2 c chopped nuts
** You can add any type dried fruit you like. I sometimes add 2 or 3 different kinds of dried fruit but you really don't want to go over 3. ex: cherries, raisins, pineapples.
Here's what to do:
Preheat your oven to 300 degrees. Add the oats, brown sugar, cinnamon, and salt to a large bowl and stir it up and make it all nice. In a separate small bowl or measuring cup (I usually use the measuring cup cause of the pour spout), add honey, oil, and vanilla. Stir that all up and make it nice. Then you want to pout the honey mixture over the combines oats mixture and mix them together. After everything is nicely combined, spread it out on the sheet pan in an even layer and bake for 15 minutes. After the 15 minutes, take the pan out the oven and mix the oats up so they can cook evenly on both sides. Put it back in the oven for another 10 minutes or so (anything thing longer than 15 minutes and you might as well start over cause it's burned). After the second time, take it out the oven and let it cool a little bit. ** Don't leave it to get cold cause you will have oat bars and not granola. This stuff gets hard fast** Once it has cooled down enough so that you can touch it, it's time to make magic. Now you add the dried fruits that you picked out and the which ever nuts that you want you add. Mix everything together until its starts to become hard not to eat it right there and then. You're DONE.
