Salmon and Veggies

Cooking is something that I love to do, but I can get out of hand with it and then it becomes time consuming. Watching all the cooking shows gives you so much inspiration and vigor. Making you feel like you can cook anything in your kitchen and you just need a couple of items. But the reality is when it comes to meal prep, the simpler the better. When the dish becomes too elaborate, multiplying for other days isn't as easy as you think.

The best thing to do is find one or two simple dishes that you like and don't take too long to cook and have those for the week. On the menu this week: Salmon and Veggies

You can't go wrong with a simple salmon dish and adding vegetables get you some great nutrients. This meal is rich with omega 3s and nutrients needed to get you through the day. So lets get to cooking 

What you need: 

  1. Salmon - you can get them already cut into 4oz pieces or buy a large piece of fish and cut it up yourself 
  2. Various vegetables - for this dish I used peppers, onions, and garlic 
  3. 2 large pans for sauteing
  4. Cooking oil - best option is extra virgin olive oil  
  5. Cutting board 
  6. Knife 

Lets Get started

  1. Clean and season salmon
  2. Heat up pan 
  3. Add oil 
  4. Cut up peppers (you can cut them however you want. This time around I went for large chunks) 
  5. The oil should be hot enough by now, so you can add the peppers. 
  6. Peel and chop up garlic then add to pan (the food will smell amazing at this point) 
  7. Stir both the peppers and garlic together. You don't want anything to stick or burn. 
  8. Chop up the onions and add them to the pan as well 
  9. Stir all the vegetables together (the smell will have you wanting some right now) 
    1. If there are any other vegetables that you want to add, chop them up and add them to the pan making sure to stir so nothing sticks or burns.
  10. Once everything is added to the pan and cooked move of burner and add other pan to cook salmon
  11. Heat up pan 
  12. Add oil 
  13. Add seasoned pieces of salmon to the pan.
  14. Cook pieces about 3-4 minutes each side (until salmon it cooked all the way through and no longer looks pink)
  15. Now its time to plate
